You don’t need piping bags for these Lightning McQueen cupcakes unless you want to. Icing piping bags are easier to use but a ziplock bag can be used instead. Cut the very tip off one corner of the ziplock bag (after you add the icing and close it).

Note: I made these Lightning McQueen cupcake toppers the day before. Once those are ready, putting everything together is fast and simple. Below I will give you some alternative ways to make these. See the Note under step 2 if making these won’t work for you.

Instructions to Follow for Lightning McQueen Cupcakes

Step 1:

Ice your cupcakes with red buttercream icing and a knife. You can use a piping bag if you want. You don’t need a lot, but enough for your cupcake toppers to “stick”. This won’t work with royal icing.

You can find a great buttercream recipe here, and materials for coloring your icing here. The picture below is royal icing but the process is same for any icing. Just add gel or liquid food coloring and stir.

This is royal icing but same concept for buttercream icing. Just add gel or liquid food coloring and stir.

Step 2:

Add your already made cupcake toppers. Stick them into the buttercream icing on top of the cupcakes.

You can pipe white buttercream icing for the “mouth” instead of making this part of the royal icing cupcake toppers. You can also just make it square instead of rounded if that is easier for you. For more alternatives, you can cut small gum or white chocolate or other candy in small rectangles instead of using icing. It will look great even without adding the black line across.

NOTE: If making the cupcake toppers the day before won’t work for you, cut squares out of white chocolate bars or other candy as mentioned above, and pipe red around the edges. The “windshield” of the car doesn’t have to have curved edges as pictured here. It will still look great with straight edges. Using sugar cookies and cutting them could also work.

Step 3:

Add the extra details to the Lightning McQueen cupcakes.

Add chocolate chips for the wheels. I added one on either side in the front and one on either side in the back. Pipe a little bit of yellow on the front for the lights. You could use small brown and yellow candies instead of icing for both of these details.

The Lightning McQueen Cupcakes, or Disney Cars Birthday Cupcakes, Are Finished

And you’re finished! These Lightning McQueen cupcakes are sure to be a huge hit. The kids will LOVE them and will be excited to eat them. With the edible icing cupcake toppers they are welcome to eat all of it! The royal icing toppers and chocolate chips add a unique cupcake that make them more fun and interesting.

Lightning McQueen cupcakes are a great way to go but you can make other colors for more of the Disney Cars birthday cupcakes. Be sure to let me see how they turned out!
